This is one of my fave fresh and healthy recipes which is packed with nutrients and helps to get your veggies in! This takes me literally 5 mins to put together and you can add in whatever veggies you like- mushrooms, chickpeas, sweet potato anything! I have a spiraliser otherwise you can buy zucchini noodles in the supermarket. I recommend serving with some protein for a complete meal like some crispy salmon or tofu.

 

zucchini noodles

Ingredients 

2 zucchinis spiralised

1/2 cup chopped cherry tomatoes

1/2 cup chopped kalamata olives

1/4 cup roasted pine nuts

1 tbsp hemp seeds

1/3 cup pesto ( home made is best! Read ingredients if you are buying )

1/4 avocado sliced

drizzle hemp seed oil

salt, pepper + chilli + hemp parmesan ( optional)

Method

Assemble all veggies together on a plate

  1. Mix through the pesto with your hands so it is all well coated

  2. Roast your pine nuts in a pan on low heat and set aside to cool

  3. Slice your avocado

  4. Sprinkle pine nuts and hemp seeds on salad

  5. Drizzle with hemp seed oil , salt, pepper, hemp parmesan and chilli to serve

  6. Serve alongside your fave protein yum!
