white choc, macadamia & raspberry cookies
Ingredients
3/4 cup almond meal
3/4 cup coconut flour
1 tsp baking powder
pinch salt
1 tsp vanilla essence
1 sachet nuvia or 2 tbsp sweetener of choice
1/2 cup coconut oil melted
1/4 cup ghee ( if you don’t have just add more coconut oil)
1 egg
3/4 cup frozen raspberries
1/2 cup white chocolate chopped
1/2 cup macadamias
1/4 cup almond milk
Method
Preheat the oven to 170 degrees celsius
Place all ingredients in a bowl or blender besides the nuts, white chocolate and raspberries
Mix together well till thoroughly combined into a dough like texture. If it feels too dry add more almond milk, it should be quite doughy
Next, stir through the nuts, white chocolate and raspberries
Line two baking trays with baking paper and roll the cookie dough into balls and place onto trays
Bake for 25 minutes or until golden
Drizzle with a bit more white chocolate for an extra naughty treat or just enjoy soft and warm from the oven ( yum)
