white choc, macadamia & raspberry cookies

If you haven’t worked it out by now, I am slightly addicted to white chocolate. I think it is unrealistic to say that you will eat clean 100% of the time so I love creating healthy treats and then adding a little naughty white chocolate sometimes if I am craving it ( otherwise a good dark chocolate is a great anti oxidant healthy hit!) I used healthy gluten free flours and binders rich in good fats e.g. ghee & coconut oil with minimal sweetener as the chocolate is just enough. These are the perfect softness with a classic flavour combination that can never go wrong. I used cadbury dream white chocolate because it is just the best and these turned out so well. Best eaten warm so the chocolate melts in your mouth ( seriously hard to stop at one)

Ingredients

3/4 cup almond meal

3/4 cup coconut flour

1 tsp baking powder

pinch salt

1 tsp vanilla essence

1 sachet nuvia or 2 tbsp sweetener of choice

1/2 cup coconut oil melted

1/4 cup ghee ( if you don’t have just add more coconut oil)

1 egg

3/4 cup frozen raspberries

1/2 cup white chocolate chopped

1/2 cup macadamias

1/4 cup almond milk



Method 

  1. Preheat the oven to 170 degrees celsius

  2. Place all ingredients in a bowl or blender besides the nuts, white chocolate and raspberries

  3. Mix together well till thoroughly combined into a dough like texture. If it feels too dry add more almond milk, it should be quite doughy

  4. Next, stir through the nuts, white chocolate and raspberries

  5. Line two baking trays with baking paper and roll the cookie dough into balls and place onto trays

  6. Bake for 25 minutes or until golden

  7. Drizzle with a bit more white chocolate for an extra naughty treat or just enjoy soft and warm from the oven ( yum)
