Easter is my favourite excuse to get creative in the kitchen ! These hot cross buns are full of delicious traditional flavours but use much more wholesome and nutritious ingredients ( plus some cheeky Easter chocolate too) Add your favourite superfoods and enjoy warm on your long weekend this April.



 

white choc hazelnut hot cross buns

Ingredients

1.5 cups almond meal

½ cup coconut flour

2 eggs

1 tbsp honey

2 tbsp coconut oil

¼ cup almond milk

½ cup roasted hazelnuts

½ cup mixed dried berries ( incan, goji, currants)

½ cup chopped white choc or dark

2 tsp all spice

2 tsp cinnamon

1 tsp ginger

1 tsp vanilla

1 tsp baking powder

Glaze

1 tbsp honey

1 tbsp almond milk

½ block melted chocolate of choice for topping



Method

  1. Preheat the oven to 180 degrees Celsius

  2. In a mixing bowl or blender combine all ingredients except for your chocolate, berries and nuts

  3. Once combined into a dough, mix in chocolate, berries and nuts with your hands ( if you put in a blender you don’t want it to blend too fine)

  4. Shape into little bun shapes and space out on your baking tray

  5. In a small bowl mix honey and almond milk in a bowl and use the mixture to glaze the top of each bun

  6. Place in the oven and bake for 20 minutes or until golden

  7. Once cooled, in a small bowl melt your choice of chocolate and drizzle to create your Easter cross shapes on top
