These are my favourite go to meal EVER! I make them at least once a week and are even better in summer- so fresh, light and tasty. Choose your favourite veggies and protein and tailor them to your taste buds in 5 minutes ! It is a great dish to whip up for a group meal and is fun for everyone to make and enjoy. They remind me a bit of the beautiful fresh and colourful food you get in Bali- a must make for anyones household.


 

veggie rice paper rolls

Ingredients 

These are what I use. Feel free to change it up depending on what you have available/ what you like

1 pkt rice paper rolls ( find in supermarket)

1/2 packet boiled edamame noodles ( great vegan protein and delicious in rice papers)

1 cucumber thinly sliced

2 carrots thinly sliced

1/2 cup shredded cabbage

1/2 capsicum thinly sliced

1/2 avocado thinly sliced

1/2 mango thinly sliced (added for a summery touch so good!)

1 cup mixed leaves

1/2 cup alfalfa sprouts

1/2 cup tofu pieces/ chicken

1 handful sunflower seeds

2 tbsp olive oil

1 tbsp finely sliced ginger

1 tbsp tamari / soy

Sauce 

1 tbsp tamari

1 tsp honey

1 tbsp hot water

1 tbsp sesame oil

1 tsp sesame seeds

1 tsp chilli flakes

1 tbsp smooth peanut butter (optional for satay version)

Method

  1. Stir sauce ingredients all together and set aside

  2. Prepare rice papers and fill with your fave goodies. Wrap , dip and enjoy!
