vegan nourish bowl
Ingredients
1 sweet potato halved
2 cups shredded kale
1/2 cup chopped roasted almonds
2 tbsp tahini
2 tbsp hemp seeds
2 tbs olive oil
salt & pepper to taste
Method
Set oven to 180 degrees celsius
Cut sweet potato in half and drizzle with a bit of olive oil and rock salt. Bake until it is golden and the skin has darkened ( mine took about 45 minutes)
In a small pan if your nuts aren’t already roasted, turn to medium heat and toss nuts for 1-2 minutes. Leave to cool
Assemble the chopped kale into two bowls
Place the sweet potato on top , then drizzle with tahini, olive oil & hemp seeds
Crush up the almonds and sprinkle generously
