I can’t believe I haven’t shared this recipe yet! It is a super easy, protein packed, nutrient dense bowl that is really quick to make and doesn’t require many ingredients at all. it is great when you are trying to cleanse and cut down meat, it is a lot easier on the digestion but is still packed with protein from the hemp seeds and good fats in the tahini , olive oil and nuts!

Ingredients 

1 sweet potato halved

2 cups shredded kale

1/2 cup chopped roasted almonds

2 tbsp tahini

2 tbsp hemp seeds

2 tbs olive oil

salt & pepper to taste

Method

  1. Set oven to 180 degrees celsius

  2. Cut sweet potato in half and drizzle with a bit of olive oil and rock salt. Bake until it is golden and the skin has darkened ( mine took about 45 minutes)

  3. In a small pan if your nuts aren’t already roasted, turn to medium heat and toss nuts for 1-2 minutes. Leave to cool

  4. Assemble the chopped kale into two bowls

  5. Place the sweet potato on top , then drizzle with tahini, olive oil & hemp seeds

  6. Crush up the almonds and sprinkle generously
