tofu nourish bowl
Ingredients
1/2 block cut up tofu
1 cup greens
1/2 cup slaw
1/2 cup alfalfa sprouts
1/2 cup capsicum or raw veggie of choice
1/2 cup roasted chickpeas
1/2 cup roasted veggies of choice ( I did broccoli and brussel sprouts)
To top: olive or hemp oil, tahini, pesto, roasted almonds, chilli, salt and pepper
Method
Preheat the oven to 180 degrees celsius
Coat your tofu, broccoli, brussels and chickpeas in olive oil and spices of choice and bake for 30 minutes ( I used dukkah, cayenne pepper & cumin)
In a bowl assemble all of your raw vegetables
Add your roasted veggies, chickpeas and tofu to your bowl
Dress with your choice of goodies , I love drizzling mine with cold pressed hemp oil, tahini and roasted almonds / seeds
