This salad is an absolute winner for everyone with the perfect combination of fresh and warm ingredients it makes for a summer or winter lunch or dinner! I took this to a friend’s birthday and it went down a treat. I had to stop myself from eating all the roasted greens while trying to prep the salad because they were just so delicious !

 

sweet potato side salad

Ingredients 

1 big bag of spinach leaves ( about 2-3 cups)

2 cups shredded kale

1 -2 cups green beans

2 cups brussel sprouts

2 broccoli heads

1 medium sweet potato

1/3 cup slivered almonds

juices of 2 lemons

1/3 cup olive oil

1 avocado cut into small cubes ( or 2 if you like extra avo )

+ salt, pepper, chilli flakes, fennel seeds , olive oil to roast veg

Method

  1. Preheat oven to 180 degrees celsius

  2. Line 2-3 baking trays with baking paper

  3. Cut sweet potato and broccoli into small pieces ( the smaller the more crispy and tasty they go ) and the brussels in half

  4. Place on tray and drizzle with olive oil, salt, pepper, chilli and fennel seeds. Toss and coat with your hands so the veg are fully covered

  5. Place in oven for about 45 mins – 1 hour or until crispy , brown and well roasted

  6. Place green beens in a pot of boiling water for 5 minutes until slightly soft but still a bit crunchy!

  7. In a large bowl place the spinach and kale as a base

  8. Top all roasted veggies and beans on top

  9. In a small pan toast your slivered almonds

  10. Place the chopped avocado and almonds on top

  11. Mix the lemon juice and olive oil in a bowl and pour over salad

Enjoy! Serve with some yummy roast chicken or other sides of choice or just on its own
