On my recent trip to New York I came across this amazing vegan cafe eat by chloe where I had one of the best salads of my life( I have made my own version , recipe coming soon!) Part of the salad was the shitake β€˜bacon’ made from mushrooms and oh my god.. once I worked out how to make it I have been adding it to everything. Not only is it delicious in salads, on avo toast but it is also so good just on its own. Just beware it shrinks like crazyyy ( think when you put spinach in a pan) so make sure you have lots. I did mine in the air fryer but you can also do it in the oven it just might take a bit longer.

 

shitake bacon

Ingredients 

2-3 cups thinly sliced mushrooms

2 tbsp avocado or olive oil

generous sprinkle of smoked paprika ( essential for the smoky bacon flavour)

generous sprinkle of nutritional yeast

1 tbsp tamari

salt + pepper + chilli ( if you like spice)

Method

Toss mushrooms through your sauce and spices and use hands to coat thoroughly , feel free to add more if you feel it needs

  1. Place in the air fryer at 180 for 25 minutes OR do the equivalent in an oven by laying the mushrooms on baking paper first in a tray nice and spread out. ( it may take longer in the oven so allow extra time as you want them to be as crispy as possible)

  2. Remove when dark and crispy and enjoy as a snack, toss through a salad, on toast or share with me how you add your own spin on insta @scoopitup_
