This is one of the best and easiest yummy salad recipes ! It is completely plant based with some yummy crispy chickpeas for protein and a dreamy tahini dressing. Serve at the table this Christmas for a healthy side .

 

chickpea slaw

Ingredients 

1 grated carrot

1 cup grated red cabbage

1/2 cup coriander

1/2 cup cranberries

1 can chickpeas pre roasted ( roast in sumac, turmeric, salt, pepper) 

1 cup aussie sprouts alfalfa 

1/2 cup crunchy combo sprouts( crunchy round ones) 

1 cup bean sprouts

dressing

2 tbsp apple cider vinegar

2 tbsp olive oil

1 tbsp tahini

1 tbsp warm water 

salt  + pepper

Method

Combine all salad ingredients together in a bowl and toss together until well combined 

Combine dressing ingredients in a bowl and slowly add water ,stirring until reaching your desired consistency 

Easy as that serve immediately!
