salted caramel & choc chunk cookies

My all time favourite treat has always been a choc chip cookie closely followed by anything caramel, and these combine my two loves in one. This is my favourite healthy sweet treat I have EVER made! The combination of tahini, vanilla, maca and vanilla protein creates a unique caramel flavour combined with melted choc chunks and the perfect gluten free flour combination to create that perfect cookie texture. Let me know if you make them and how long they last you ( mine were gone in two days oops)

 

salted caramel & choc chunk cookies

Ingredients

1 cup almond meal

3/4 cup buckwheat flour

1/4 cup coconut flour

1 tsp rock salt + extra for sprinkle on top

1 tsp vanilla bean

2 tsp baking soda

1 egg (vegan sub for chia or flax egg)

2 tbsp coconut oil

3 tbsp maple syrup

1 tsp maca powder

1 tsp tahini

1 tbsp vanilla protein powder ( I used tropeaka lean vanilla)

1/2 cup choc chunks ( I used dark choc )

Note: the protein powder helped create a great caramel flavour. If you don’t have vanilla protein, double your amount of vanilla, tahini and maca to increase caramel flavour

Method

  1. Preheat oven to 175 degrees celsius

  2. Mix all ingredients besides chocolate in blender or bowl

  3. Stir through choc chunks

  4. Place on baking tray and sprinkle with extra rock salt

  5. Bake for 20 minutes or until golden

  6. Allow to cool and enjoy ( best served warm!)
