salmon & turmeric coconut fries

This meal for breakfast or lunch is the perfect balance of protein, good fats, veggies and carbohydrates. It is so delicious and super easy to make- great to have when you’re cooking for friends too!

Note- you can use coconut oil or olive oil. I massaged the sweet potato chips in coconut oil and did my other veg in olive oil, so both works!


 

salmon & turmeric coconut fries

Ingredients 

2 pieces of salmon

dressing:( 1 tbsp olive oil, 1 tbsp sesame oil, 1 tbs sunflower seeds, 1 tbsp tamari, salt, pepper, 1 tbsp chilli flakes, 1 tbsp fresh chilli)

3 large kale leaves( drizzle with olive oil and salt)

4 stalks broccolini ( drizzle with 1 tbsp olive oil, chilli flakes, salt)

1/2 large sweet potato cut into chips

( 2 tbsp turmeric, 2 tbsp desiccated coconut to coat chips)

Method

Preheat the oven to 180 degrees celsius

Cut the sweet potato into sticks and roll in the turmeric and coconut and bake for 45-60 mins or until crispy

Mix the salmon dressing in a bowl and marinade the salmon for 5-10 mins while you prepare the broccolini and kale and place into a tray and then add the salmon. Feel free to add some garlic cloves here if you wish!

Put into the oven for 20 mins or until cooked

Serve with lemon and enjoy!
