salmon ceviche

This is the perfect fresh summer dish - serve as a starter or a main. You can also use kingfish or other fish if you don’t have salmon.


 

salmon ceviche

Ingredients 

3 fillets salmon finely chopped, skin off

juice of 1 lemon

2 tbsp olive oil

salt, pepper , chilli

1/2 bunch coriander

1 cup red cabbage

1 mango sliced

mayo to serve ( I love the good food co)

Method

Preheat oven to 200 degrees celsius

  1. Place salmon, olive oil, fish, salt, pepper and chilli in a bowl and coat well. Leave in fridge overnight

  2. Assemble salad ingredients and serve altogether, top with more salt and pepper + herbs when serving
