I love trying to add as many veggies into my daily meals as I can . Try and aim for as much colour and flavour as possible to really nourish your gut microbiome and ensure you are eating a variety of different foods.



 

roasted cauliflower salad

Ingredients 

2 cups mixed leaves

1/2 cup chopped baby tomatoes

5 radishes finely sliced

2 cups turmeric roasted cauliflower

1/3 cup mixed toasted seeds

olive oil , salt, pepper, lemon

roasted pecans or nuts of choice

Method

  1. Toast nuts in pan and set aside

  2. Roast cauliflower at 200 degrees for 30-40 minutes topping with olive oil, turmeric, salt, pepper and chilli

  3. Combine all ingredients together and top with seeds and nuts

  4. Top with olive oil, salt, pepper and lemon
