vegetable frittata

 

This is one of my fave recipes to meal prep on a weekend , especially when I have a busy week as you can grab it as a quick meal/ snack on the go!

 

vegetable frittata

Ingredients 

8 eggs

1/2 pumpkin chopped

1 capsicum chopped

1 zucchini chopped

1/2 bunch broccolini chopped

1 cup halved cherry tomatoes

1 cup chopped mushrooms

1/2 cup feta + 1/2 cup grated cheese ( for non vegans)

salt and pepper

fresh parsley ( 1/2 bunch chopped)

1 chopped and pan fried leek

Method

Preheat oven to 180 degrees

  1. In a tray, place your pumpkin, capsicum, zucchini, broccolini and mushrooms and drizzle with some olive oil, salt and pepper. Bake for 30-40 mins till soft

  2. In a large dish combine all ingredients except for tomatoes, parsley and eggs.

  3. In a small bowl beat the eggs and pour over the veggies. Sprinkle with tomatoes and fresh herbs

  4. You can add some more grated cheese on top if you like

  5. Sprinkle with salt and pepper and bake at 180 for 45 mins till golden. Store in the fridge and enjoy!
