roasted broccoli pistachio salad

 

This is a delicious side salad to add to any meal - pair with your fave protein or even stir through some crunchy chickpeas ! The quinoa provides a great source of plant protein as well as complex carbs too.

Ingredients 

2 cups rocket leaves

1 whole head of broccoli

seeds 1/2 pomegranate

1 cup chopped cucumber

1/3 cup roasted pistachios

1/3 cup roasted pepitas

1 cup cooked quinoa

Dressing : juice 1 lemon, 2 tbsp olive oil, 1 tbsp tahini, 1 tbsp wholegrain mustard

Method

Preheat oven to 180 degrees

  1. In a tray place your cut up broccoli pieces with 3 tbsp olive oil, salt and pepper. roast for about 30 mins until crisp and set aside

  2. Place 1 cup quinoa in a pan with 3 cups water and bring to the boil, simmer once absorbed and drain

  3. Place your pistachios and pepitas into the pan and toast lightly

  4. Combine all ingredients together in a big bowl

  5. Mix your dressing and mix through before serving

  6. Feel free to add in some grilled salmon, chicken, chickpeas or eat as is!
