roasted broccoli pistachio salad
Ingredients
2 cups rocket leaves
1 whole head of broccoli
seeds 1/2 pomegranate
1 cup chopped cucumber
1/3 cup roasted pistachios
1/3 cup roasted pepitas
1 cup cooked quinoa
Dressing : juice 1 lemon, 2 tbsp olive oil, 1 tbsp tahini, 1 tbsp wholegrain mustard
Method
Preheat oven to 180 degrees
In a tray place your cut up broccoli pieces with 3 tbsp olive oil, salt and pepper. roast for about 30 mins until crisp and set aside
Place 1 cup quinoa in a pan with 3 cups water and bring to the boil, simmer once absorbed and drain
Place your pistachios and pepitas into the pan and toast lightly
Combine all ingredients together in a big bowl
Mix your dressing and mix through before serving
Feel free to add in some grilled salmon, chicken, chickpeas or eat as is!
