roast veggie medley
Ingredients
1 broccoli
1 bunch asparagus
3 carrots sliced lengthways
1 red capsicum cut into chunks
1 can chickpeas
1 handful fresh herbs ( i used mint)
3 tbsp olive oil
salt, paprika, turmeric, pepper
2 tbsp pepitas
Method
Preheat oven to 180 degrees
Place veggies into 2 trays and drizzle with olive oil, spices and salt and pepper and use hands to toss everything well so it is all coated
Bake for 45 minutes or until all veggies are golden and crispy
Top with fresh herbs and pepitas and enjoy!
