Who doesn’t love Mexican?! ( no one) Hence why I created these delicious raw nachos ooooh yeah. Sometimes despite traditional flavours being delicious, mexican food is often full of preservatives and rich sauces and cheese that can leave us feeling slightly ill after eating. This version takes all the best, fresh and delicious components of Mexican Nachos without the nasties! For the chips I used my new favourite chips made out of almonds ( yes its a thing!), otherwise any of your favourite corn or sweet potato chips will work. Beetroot or kale chips would also be fab too! With no cooking involved, it is a super quick meal to make and just as delicious


 

raw nachos

Ingredients 

1 bunch cos lettuce leaves

1 cup alfalfa sprouts

1 packet of chips of choice ( I used temole almond chips)

2 tbsp crumbled feta (optional)

1/2 cup chopped baby tomatoes

Sauerkraut (optional)

Juice of 1 lemon

*If you are serving this as a main meal, try adding some chickpeas, beans or tofu for some protein. Otherwise serve as an epic side to any meal!

For the Guac: 

1/2- avocado ( depending on numbers)

1 tbsp fresh chilli

salt, pepper, extra lemon

1 tbsp olive oil

1 tbsp finely chopped red onion


Method

  1. Squeeze your lemon juice into one cup/bowl

  2. In another bowl mash up your avocado, salt, pepper, chilli, red onion and a drop of olive oil and lemon juice

  3. In your serving bowl, lay your lettuce leaves and sprouts

  4. For the next later spread your chips evenly

  5. Top with tomatoes, feta, avocado, kraut and any other additions you have

  6. Pour the remaining lemon juice on top with lots of salt and pepper ( + extra spice if you wish)
