So I know Halloween isn’t really a big thing in Australia but I thought it was a good excuse to get creative in the kitchen! These brownies are made with cooked pumpkin ( hello sneaky veg!) and yummy wholesome ingredients for a perfect pick me up treat. If you like these a little more indulgent you can also add some dark choc chips. Note the protein powder is optional and will also work without



 

pumpkin spice brownies

Ingredients

1 cup preboiled and cooled pumpkin

1/2 cup almond meal

1/2 cup roasted pecan nuts

2 tbsp pumpkin spice or vanilla protein (optional: add extra almond meal if not)

1 tbsp nut butter ( I used roasted almond)

1/2 cup coconut flour

2 tbsp maple syrup

1 tsp cinnamon

1 tsp allspice

chocolate or almond butter to drizzle

Method

  1. Mix all ingredients besides pecans in a blender until well combined

  2. Stir through pecans

  3. Line a baking tin with baking paper and spread the mix evenly

  4. Set in freezer for 2 hours

  5. Drizzle with nut butter or dark choc and enjoy!

  6. Store in freezer or fridge if you like them a bit softer
