So one of my biggest loves is a good crispy schnitzel. A perfect crumb, not too thick. You might usually use chicken but have you ever tried pork? It is a great lean protein to try when you’re a bit sick of chicken and is also great in a mince also. This recipe I made myself using almond meal to avoid the gluten that usually comes with regular bread crumbs on schnitzel. It is also a great little activity in the kitchen to crumb your own and turn it into a but of fun! Pair with this yummy salad and you’re good to go. Note: I use crispy chickpeas in this salad which I usually prep on the weekend and store in a container during the week to add to salads and meals like this. I highly recommend it .


 

pork schnitzel salad

Ingredients 

one pork fillet sliced

1/2 cup almond meal

1 egg

spices of choice- think cumin, chilli, cayenne, turmeric, salt, pepper, fresh herbs

1 cup shredded kale

1/3 cup brown rice

1/2 carrot sliced

1/2 cucumber sliced

handful coriander

1/4 cup crispy chickpeas

handful pepitas or your favourite nuts to top ( I also added a touch of dukkah from the cupboard!)

to dress the salad: 1 tbsp olive oil , 1 tbsp tamari, 1 tbsp coconut aminos ( if you have if not tamari will do the trick!)

Method

  1. Heat a small pan with a small bit of olive oil on medium heat

  2. Place your egg in one bowl and almond meal in another. Take each piece of pork and dip in the egg making sure it is all covered. Then roll in almond meal and make sure it is well covered

  3. When the pan is hot, cook your pork for a few minutes per side. Make sure the heat is medium not high or it will burn the outside and not cook the inside

  4. In your bowl, place the rice and salad ingredients and toss together

  5. Place schnitzel once cooked with your salad and top with your fresh coriander, chickpeas and nuts/seeds.

  6. Combine your olive oil, tamari and coconut aminos and drizzle over your bowl – andddd enjoy!
