pesto chicken zoodles
Ingredients
1 pack of zucchini noodles OR 1-2 cups of home made zoodles
1/2 packet chicken breast sliced and cooked
3/4 cup sliced mushrooms
3/4 cup diced baby tomatoes
2-3 tablespoons of dairy free pesto
3 tbsp olive oil
2 garlic cloves crushed
handful basil leaves
salt and pepper to taste
Method
Boil the zucchini noodles for 3-5 minutes or until soft
In a medium pan, heat the olive oil and garlic
Add the noodles (drained without water), vegetables, chicken and basil and toss in the pan until lightly sautΓ©ed and warm
Turn off the heat and stir through the pesto, top with extra basil, salt and pepper..serve and enjoy!!
