This delicious gluten and dairy free alternative to your regular pasta dish is a nutrient dense , delicious meal to make for lunch or dinner! Filled with protein and vitamins, this veggie rich dish is as yummy as it looks and even better, is super easy! Whip it up in just 15 minutes max and serve for yourself or friends too!



 
 

pesto chicken zoodles

Ingredients 

1 pack of zucchini noodles OR 1-2 cups of home made zoodles

1/2 packet chicken breast sliced and cooked

3/4 cup sliced mushrooms

3/4 cup diced baby tomatoes

2-3 tablespoons of dairy free pesto

3 tbsp olive oil

2 garlic cloves crushed

handful basil leaves

salt and pepper to taste


Method

  1. Boil the zucchini noodles for 3-5 minutes or until soft

  2. In a medium pan, heat the olive oil and garlic

  3. Add the noodles (drained without water), vegetables, chicken and basil and toss in the pan until lightly sautΓ©ed and warm

  4. Turn off the heat and stir through the pesto, top with extra basil, salt and pepper..serve and enjoy!!
