Peanut Butter Sesame Bars

Happy Hump Day ! To celebrate- here are a quick and easy on the go snack I made up on the weekend. After a family friend made some similar bars (not so clean) I was determined to make a healthier version and they are so good – everyone loved them. They’re super quick and easy- just toss into a bowl and chuck in the freezer. Great for lunch boxes, uni, work or just a little something to keep you going between meals. Mix it up with your favourite superfoods to make your own version too!

 

Peanut Butter Sesame Bars

Ingredients

  • 1 cup rolled oats

  • 1/2 cup crushed buckinis (optional)

  • 2 tbsp linseeds

  • 2 tbsp pepitas

  • 3 tbsp sesame seeds

  • 2 tbsp goji berries

  • 3 tbsp coconut flakes

  • 1 tbsp cinnamon

  • 1-2 tbsp coconut oil (melted)

  • 2 tbsp honey

  • 2 tbsp peanut butter

  • pinch of salt

Method 

  1. Mix all dry ingredients in a bowl

  2. In a separate bowl melt the coconut oil and then combine with the honey and peanut butter

  3. Mix the wet mixture into the dry until everything is coated and wet

  4. Place in a baking tray lined with baking paper and place in the freezer overnight to set

  5. Cut up and enjoy!
