paleo giant salted caramel cookie

Ok so .. for those of you following me on instagram (@scoopitup_) you will have seen this recipe and see me post it probably once a week because I haven’t stopped making it. This is the easiest , tastiest healthy treat EVER. Seriously the ingredients are so clean – it is high in healthy fats so is a filling and nutrient dense dessert. Go for a really dark chocolate ( 90%) and you’ll get that anti oxidant hit of raw cacao without the added sugars of other chocolate. I use cashew butter and tahini for the best caramel flavour but if you don’t have that at home, any nut butter will work !

Ingredients

1 tbsp almond meal

1 tbsp buckwheat

1 heaped tsp cashew butter

1 heaped tsp tahini

1 tbsp almond milk

1/2-1 tbsp sweetener of choice ( maple is great for flavour)

1/4 cup chocolate of choice ( I love lindt 90% or pumpy jackson)

1 tsp baking powder

pinch rock salt

1 tsp vanilla



Method 

  1. Preheat oven to 170 degrees celsius

  2. In a mixing bowl combine all ingredients. Stir with a spoon or can just use your hands to mould together . If it is too dry add some more almond milk or if too wet just add some more flour

  3. Place on a baking tray and bake for 10 minutes. Sprinkle with extra rock salt for ultimate flavour
