New York choc chunk granola

So when I was in New York I came across this insane almond butter granola with choc chunks in it.. it was gone in a few days it was just the yummiest snack/ dessert ever ! I recreated my version using all the same ingredients and it honestly turned out so well I was so happy with it. You HAVE to make this ! It is the best snack just on its own or would be epic over some coconut milk ice cream


 

New York choc chunk granola

Ingredients

1/2 chopped nuts of choice ( I did almond/macadamia/cashew)

2/3 cup shredded coconut

1/3 cup oats

1/3 cup buckinis

1 tbsp pumpkin seeds

1 tbsp hemp seeds

1 tbsp chia seeds

2 tbsp maple syrup

1 tbsp almond butter

1 tbsp coconut oil

1/2 block dark choc in chunks

2 tbsp cacao nibs

2 tbsp cacao powder ( I used a mushroom infused one!)

generous amount rock salt

1 tsp vanilla

1 tsp maca powder ( optional)

Method 

  1. Preheat oven to 170 degrees

  2. Mix all dry ingredients in a bowl except the chocolate

  3. Combine wet ingredients into a cup and microwave together for 30 seconds

  4. Stir together and then pour into dry mix and toss together until everything is wet ( add more wet if you need here so everything is covered)

  5. Stir through choc chunks

  6. Line on baking tray or two. Important that it is spread out thin so it will go chunky as if it’s too thick it won’t

  7. Bake for 15 minutes then remove

  8. Allow to cool COMPLETELY before placing into Tupperware. This is where chunks  ( dreams ) are made
