For any of you Sydney friends feeling the cold right now.. this is all I am craving for lunch and dinner! Warm meals filled with yummy flavours like this crispy miso salmon with oven roasted green veggies ! This one is super easy- you can do it in the pan or the oven, both work well.


 

miso salmon & greens

Ingredients 

  • 2 pieces salmon

    1 cup brussel sprouts

    1 cup green beans

    4 cloves garlic

    2 cups fresh rocket

    1 lemon juiced

    1-2 tbsp olive oil

    For Miso

    1 tbsp miso paste

    1 tbsp chopped fresh ginger

    1 tbsp olive oil

    1 tsp sesame oil (optional)

    1 tsp chilli flakes

    1/4 cup boiling water

Method

Oven :

  1. Preheat oven to 180 degrees celsius

  2. Cut up beans, brussels , garlic and other veggies of choice ( I love adding broccoli too!)

  3. Lay on baking tray and cover with 1-2 tbsp olive oil, salt and pepper

  4. Lay salmon pieces on a seperate baking tray and cover with miso dressing

  5. Bake for 15-20 minutes ( leave the veggies in too as they often take longer to cook and are yummiest when golden and crispy!)

  6. Lay the rocket on each plate and place veggies on top and cover with lemon juice. Then place the miso salmon on top and enjoy!

Pan :

  1. Heat oven on medium heat with olive oil, salt and pepper

  2. Place green veggies in the pan and toss for a few minutes until golden and cooked

  3. Place salmon pieces in the pan and cover with miso dressing. Leave for a few minutes until the dressing has been absorbed / evaporated and turn the fish over for another 3-4 minutes

  4. Place the rocket at the base of plate and add veggies then squeeze with lemon juice. Place the salmon on top and you’re done!
