mexican buddha bowl
Ingredients
1 small cos lettuce
10 cherry tomatoes chopped
1 lime cut into quarters
1/2 cup corn
1/2 cup beans
1/4 of a small purple cabbage finely sliced
1 small cucumber chopped up
1 avocado
falafel chips (or chips of choice e.g. corn, lentil, bean)
chilli, salt, pepper, paprika to taste
1-2 slices of cauliflower (optional)
Method
Preheat oven to 180 degrees. Cut up the cauliflower and season with paprika, salt, pepper and some olive or coconut oil and bake for 20 minutes
mash up the avocado in a small bowl with salt, chilli, pepper, lime and onion if you like
assemble all of the fresh veg onto a big plate or bowl and serve to enjoy!
