My favourite meal consists of anything with raw and fresh vegetables. Mexican flavours and food can be so yummy but often full of hidden sugars and preservatives and can leave you feeling very sluggish. This yummy bowl is a healthy version of those meals and is a great snack plate or salad. You can add whatever fresh veggies you have in your fridge! I have used some delicious spicy falafel chips from the wholesome food company in here too which are sooo good and a great extra protein hit with the crunch. I found it super yummy to fill the lettuce leaves with a bunch of veggies on the board with some chips and guac on top!! Feel free to add some other protein like some scrambled tofu, beef mince or spicy chicken pieces!

Ingredients 

1 small cos lettuce

10 cherry tomatoes chopped

1 lime cut into quarters

1/2 cup corn

1/2 cup beans

1/4 of a small purple cabbage finely sliced

1 small cucumber chopped up

1 avocado

falafel chips (or chips of choice e.g. corn, lentil, bean)

chilli, salt, pepper, paprika to taste

1-2 slices of cauliflower (optional)

Method

  1. Preheat oven to 180 degrees. Cut up the cauliflower and season with paprika, salt, pepper and some olive or coconut oil and bake for 20 minutes

  2. mash up the avocado in a small bowl with salt, chilli, pepper, lime and onion if you like

  3. assemble all of the fresh veg onto a big plate or bowl and serve to enjoy!
