macadamia choc brittle slice

Not sure if it’s just me but sometimes my inner creative chef comes out at night and I just whip up these random creations ? Lol well this happened last night but I am NOT mad about it ! These slices are to dieeee for and could not recommend more . They aren’t baked so store these in the freezer as they melt quickly. Macadamias are a real game changer.. who agrees ? macadamia choc brittle slice

Ingredients

Base

1 cup almond meal

1 tsp vanilla

1 tsp maca powder (optional)

1 scoop vanilla protein ( or extra almond meal) – I used vegan vanilla shortbread protein from naked harvest, use SARAHC for 15% off!

1 tbsp flaxseeds

2 tbsp coconut oil

2 tbsp maple syrup

1 tbsp almond butter ( I used vanilla rx the best!)

2 tbsp coconut flour ( can also use more almond meal)

Middle

3/4 cup roasted crushed macadmias

1 tsp honey (maple for vegan)

rock salt

1 block dark chocolate melted



Method 

  1. Blend all base ingredients in a blender and line in a baking tin and press down firmly to create a base

  2. In a small saucepan or pan, roast the macadamias on medium heat until roasted and then stir in the honey and some rock salt

  3. Place macadamias in fridge to cool for 10-15 minutes

  4. Spread macadamias over the base and press into the dough so that it is even

  5. Melt your chocolate and pour over the top until it is evenly spread

  6. Set in freezer for 4+ hours and then slice. Store in freezer
