lemon, poppyseed & macadamia shortbread
Ingredients
1 tsp baking soda
pinch salt
2 tbsp poppyseeds
zest of 1 lemon
1/2 cup chopped macadamias
1-2 tbsp honey ot maple
1/3 cup almond meal
1/3 cup coconut flour
1/3 cup buckwheat flour
1/2 cup melted coconut oil
Method
Preheat the oven to 180 degrees
Combine all ingredients together except for macadamias
Stir through macadamias into dough
Press into a lined baking tin and bake for 12-15 minutes or until golden
Slice once cooled and store in an airtight container
