kale & chickpea vegan salad

You just cant go past a good kale salad with a creamy dressing and crispy chickpeas. Get creative and add your faves to make this your own !

 

kale & chickpea vegan salad

Ingredients 

2 cups shredded kale

1 cup chopped radish

1 can chickpeas roasted

1/2 cup cooked brown rice

handful cranberries

1/3 cup slivered almonds roasted

dressing of choice : I used cashew cheese, could also use tahini or something spreadable to mix through ( around 1/2 cup)

salt, pepper + olive oil

Method

  1. Preheat the oven to 200 degrees

  2. Coat chickpeas in olive oil, salt, pepper and spices of choice eg cumin, chilli, turmeric, paprika for 30-40 mins until crispy

  3. Assemble all salad ingredients together and mix cashew cheese through the salad well so everything is coated ( I recommend using your hands )

  4. Drizzle with olive oil, salt, pepper and extra nuts
