Japanese tofu salad

I love making things myself but sometimes you run out of time or need something quick and easy to add to meals. This morning, I bought some of this satay marinated tofu from my local coles and added it to a delicious salad with coconut kale. I used a combination of both raw and cooked vegetables to create a great nutrient dense and easy to digest breakfast. ( also delicious !) I have posted the recipe below- the game changer is definitely also sautéing your kale in coconut oil, salt and coconut flakes wowww


 

Japanese tofu salad

Ingredients 

1 block satay tofu or regular tofu

1 cup chopped cos lettuce

1 baby cucumber chopped

1/2 cup shitake mushrooms

1/2 cup kale

1 handful saurkraut

1/4 avocado

1 tbsp coconut flakes, salt, pepper, chilli, dukkah, crispy shallots ( optional toppings)

2 tbsp coconut oil

Method

  1. Heat a small pan on medium heat and place kale, coconut and mushrooms in pan with coconut oil and some salt

  2. In the meantime, slice your lettuce and cucumber and place on plate

  3. Once sautéed , place your veggies onto plate and add your kraut and avocado and tofu

  4. Sprinkle with your favourite goodies and a drizzle of olive oil. I added salt, pepper, fresh chilli, dukkah & crispy shallots! The more the merrier … enjoy!
