hemp seed & peanut butter cups
Ingredients
Base
1/2 cup oats or buckwheat
1/4 cup almond meal
1/4 cup shredded coconut
1 tbsp pepitas
1 tbsp hemp seeds
1 tbsp almond butter
1/2 tbsp honey ( see how sweet you like)
1 tbsp coconut oil
pinch rock salt
Middle
3 tbsp salted peanut butter
1 scoop vanilla protein ( helps to make creamy texture, not essential)
2-3 tbsp almond milk ( add slowly as you need)
+ 3-4 squares dark choc melted
Method
Combine base ingredients into a dough like consistency
Press into cupcake moulds and pop in freezer
Place 3 tbsp salted peanut butter, 1 scoop vanilla protein + 2 tbsp almond milk in a bowl. Stir well until a thick mixture forms ( you may not need all the milk)
Place over the cupcake moulds in freezer
Drizzle with melted dark chocolate and allow to set for at least 1 hour
