hemp seed & peanut butter cups

Came up with this recipe the other day just playing around in my  kitchen trying to use up some ingredients lying around. These turned out so deliciously – I actually used some old granola instead of oats which gave the base great texture , so if you have that I would recommend using it! Otherwise plain oats in the base are fine just make sure you pack in some seeds/coconut for texture and crunch! These are a winner for everyone .. yum yum



 

hemp seed & peanut butter cups

Ingredients

Base

1/2 cup oats or buckwheat

1/4 cup almond meal

1/4 cup shredded coconut

1 tbsp pepitas

1 tbsp hemp seeds

1 tbsp almond butter

1/2 tbsp honey ( see how sweet you like)

1 tbsp coconut oil

pinch rock salt

Middle 

3 tbsp salted peanut butter

1 scoop vanilla protein  ( helps to make creamy texture, not essential)

2-3 tbsp almond milk ( add slowly as you need)

+ 3-4 squares dark choc melted

Method 

  1. Combine base ingredients into a dough like consistency  

  2. Press into cupcake moulds and pop in freezer 

  3. Place 3 tbsp salted peanut butter, 1 scoop vanilla protein + 2 tbsp almond milk in a bowl. Stir well until a thick mixture forms ( you may not need all the milk) 

  4. Place over the cupcake moulds in freezer 

  5. Drizzle with melted dark chocolate and allow to set for at least 1 hour
