grilled salmon & cauliflower salad

 

This has been a go to meal lately. If you don’t have time to roast veggies it is a great way to use up leftover roasted veggies that you have in the fridge to throw into the salad ! Pomegranate is also a great source of antioxidants and so delicious in a summer salad.

Ingredients 

1 piece of salmon ( grilled in 2 tbsp olive oil, 1 tsp miso, salt, pepper, chilli)

1 cup rocket

1/2 cup chopped radish

1/2 cup chopped baby tomatoes

1/2 head cauliflower pre roasted in olive oil, salt, pepper, turmeric

1/2 pomegranate seeds

1/3 cup pepitas roasted

Dressing

2 tbsp tahini

2 tbsp lemon juice

2 tbsp olive oil

1 tbsp miso paste

Method

Preheat oven to 180 degrees

  1. In a tray place your piece of salmon. Mix your olive oil, miso, salt, pepper and chilli in a bowl and pour over salmon to bake for 15 mins ( or can fry in pan )

  2. To make your salad, grab your pre roasted veggies then chop up your radish , tomatoes and take out your pomegranate seeds. Mix into the rocket and veg

  3. Place your pepitas into a small pan and toss for 2-3 mins until golden

  4. Mix your dressing ingredients well and pour over salad, tossing well , adding all the chopped veg and pepitas

  5. Serve with your salmon and enjoy !
