This has been my quick go to salad of the moment lately in summer- it is so fresh and so quick to make and goes with any protein ( my favourite is pairing it with salmon!) My mum and brother both love it as well and you can throw in whatever veggies you have at home – anything and everything goes well with zoodles! A great alternative to regular pasta. Note: you can buy a spiral gadget to make them from kmart I got one for $15 , otherwise woolies and coles also sell zucchini noodles premade.

Ingredients 

2 zucchinis OR 1 pkt zucchini noodles

1 cup of cos lettuce

1 cup spinach

1 cup brussel sprouts

1/2 avocado

1/4 cup crushed almonds

Dressing

1 tbsp olive oil

1 tbsp apple cider vinegar

1 tsp dijon mustard

1 tsp hot mustard

1 tbsp tamari or soy sauce

1 tbsp black sesame seeds

( I also added some coconut aminos but this is optional!)

salt, pepper & chilli flakes to taste

Method

  1. Preheat the oven to 180 degrees

  2. Cut the brussel sprouts into halves or quarters depending on size and drizzle with olive oil, salt and pepper. Bake for 30 minutes or until crispy

  3. In a large bowl place your spinach and chopped up lettuce

  4. Next, take your zucchini noodles and place in bowl

  5. Toss all greens together

  6. Add in your brussel sprouts, almonds and cut up avocado

  7. In a small bowl mix your dressing ingredients together well and drizzle on top
