good green salad
Ingredients
2 zucchinis OR 1 pkt zucchini noodles
1 cup of cos lettuce
1 cup spinach
1 cup brussel sprouts
1/2 avocado
1/4 cup crushed almonds
Dressing
1 tbsp olive oil
1 tbsp apple cider vinegar
1 tsp dijon mustard
1 tsp hot mustard
1 tbsp tamari or soy sauce
1 tbsp black sesame seeds
( I also added some coconut aminos but this is optional!)
salt, pepper & chilli flakes to taste
Method
Preheat the oven to 180 degrees
Cut the brussel sprouts into halves or quarters depending on size and drizzle with olive oil, salt and pepper. Bake for 30 minutes or until crispy
In a large bowl place your spinach and chopped up lettuce
Next, take your zucchini noodles and place in bowl
Toss all greens together
Add in your brussel sprouts, almonds and cut up avocado
In a small bowl mix your dressing ingredients together well and drizzle on top
