Gluten Free Pancakes

Lazy weekends in bed call for pancakes under the duvet and warm cups of coffee. These pancakes are so yummy but full of goodness unlike regular pancakes that can often leave us feeling a bit sluggish. Instead these energising pancakes are packed with nutritious ingredients and a decadent tahini caramel sauce and crunchy cacao granola ( oh yeahhhh) 

 

Gluten Free Pancakes

Ingredients ( serves 1 )

  • 2 eggs

  • 1 banana

  • 1 tbsp protein ( I use vanilla hemple ( use SARAHC10 for discount) or tropeaka)

  • 1 tsp vanilla

  • 1 tbsp coconut oil

Sauce 

  • 1 tsp tahini

  • 1 tsp nut butter

  • 1 tsp maple syrup

  • + toppings of choice e.g. raspberries, cacao nibs, granola, nuts, seeds, coconut

Method

  1. Heat a small pan with coconut oil on medium and allow to heat

  2. In a bowl combine all pancake ingredients and whisk or blend

  3. Heat in pan for about 2 minutes each side or until cooked

  4. Place sauce in a small bowl and mix well with a spoon ( if its too thick add a drop of warm water)

  5. Drizzle over your pancakes and add your yummy toppings of choice
