These are the yummiest treat ever ! I made them for a friend’s birthday – the combination of oats, nut butter and the decadent flavour of pecan nuts along with the crumbly texture is seriously good. Use almond or cashew butter if you don’t peanut – and enjoy! I topped mine with homemade choc but you can also melt your favourite bar on top.

Ingredients

Base

1.5 cup oats ( sub for buckinis if you need)

1 cup pecans & walnuts chopped

1 tsp vanilla

1/4 cup rice malt

2 tbsp coconut oil

2 tbsp Peanut Butter or nut butter of choice ( could also do tahini or coconut butter)

Top

1/2 cup cacao

1/2 cup melted coconut oil

1 tbsp rice malt (optional_

buckwheat, coconut, rose petals, nuts etc ( whatever you like!) I used loving earth cacao buckinis




Method 

  1. Combine all base ingredients in a bowl ( don’t use a high speed blender as this will make the mix too fine, so blend on a slow or medium speed if using)

  2. Line a tray and press mixture firmly down. Pop in freezer while you make your topping

  3. Melt your coconut oil and rice malt and then stir in the cacao powder. If using chocolate, melt the block slowly over a double boiler ( microwave often burns!)

  4. Pour over the base layer and sprinkle with desired toppings

  5. Pop in freezer to set for at least 2 hours , until everything is hardened and then slice and serve
