fig, pomegranate & hazelnut salad
Ingredients
1-2 sliced figs
small packet of rocket
handful of mint leaves
1/4 pomegranate seeds
3 tbsp ricotta (broken up)
2 tbsp roasted hazelnuts
Method
Lightly pan fry the hazelnuts in a small pan until golden and leave to cool
Lay out the rocket on a plate and then add the sliced figs, ricotta, mint leaves, pomegranate and nuts
( replace the ricotta for vegan cheese or an extra veg of choice for a vegan/dairy free option)
