crunchy choc superfood bars

I made these delicious healthy treats for my friend’s birthday recently! They are sort of like a super food packed rocky road but with the added benefit of hemp seeds and lots of extra crunch from the puffed rice and buckwheat. I used hemp seeds from hemple and used the choc hemp granola from naked foods ( a bulk whole foods store in Sydney.) However you can just use what you have also and it will work just as well!  I used all my random bits and bobs in the cupboard to make this so just use whatever random things you have e.g. muesli, trail mixes, random ingredients and you’ll be surprised how well it comes together. Add your fave goodies , be creative and get cooking some healthy treats for everyone to enjoy

TIP: this is best done with your hands to combine as you don’t want the blender to chop up all the crunchy goodies into a flour !

Ingredients

5 dates OR use 1/2 cup sweeter of choice e.g. maple/ rice malt

1 tbsp coconut butter (optional, or use extra nut butter)

1 tbsp nut butter ( I love almond)

3 tbsp coconut oil

3 tbsp cacao powder

1 cup choc hemp granola( or any you have)

2 tbsp hemp seeds

1/2 cup buckinis

1/2 cup goji berries

1/2 cup chopped hazelnuts or mixed nuts

1/2 cup coconut flakes

1/2 cup pepitas

1 tsp rock salt

1 tsp vanilla




Method

  1. In a blender place dates, salt, vanilla and roughly chop until sticky/ paste like

  2. In a large mixing bowl place all dry ingredients in and combine with hands

  3. In another bowl, mix the coconut oil, nut butter, coconut butter and vanilla and heat in microwave with the date paste ( about 1 min)

  4. Combine everything together with your hands and fold through till everything is fully coated ( if it doesn’t feel wet enough add more nut butter to help stick)

  5. Place in a lined baking tin and allow to sit in freezer for a few hours before slicing
