Whats better than a tray of choc chip cookies? One giant one.. filled with choc chips & cashew butter to create that delicious creamy, fudgy caramel flavour. This recipe is SO easy and is a perfect creative alternative to a regular cake- cut it up however you want to ( or just eat the whole thing as one giant cookie cause why not?) The healthiest dessert you will ever eat and still tastes just as god, arguably better than your regular choc chip cookie

Ingredients

1/2 cup choc chips + extra for on top

2 tbsp coconut butter

1 tbsp coconut syrup

1/ 2 cup almond meal

1/2 cup coconut flour

1 tbsp cashew butter

1 tsp rock salt

pinch vanilla

1 egg

dash almond milk

Method

  1. Preheat oven to 180 degrees celsius and line a oven proof pan or round tin with baking paper

  2. Combine all ingredients into a bowl or blender. You want the consistency to be like a cookie dough

  3. Flatten out into pan

  4. Bake for 20-25 minutes or until slightly golden on top ( or less for more fudgy centre)

  5. Sprinkle choc chips on top straight away while warm so they slightly melt ( yep I know .. yum)
