chunky choc oatmeal cookies

Honestly this is just the best go to cookie of all time. You cannot go past an oatmeal choc chunk biscuit am I right ? Especially in winter I am baking allllll the cookies ( is it just me?) I used olive oil in these which was a really nice change to coconut oil. If you don’t like oats you can always replace with almond/buckwheat/coconut flour !


 

chunky choc oatmeal cookies

Ingredients

1.5 cups oats/muesli

1 cup flour of choice

1 egg / flax egg

1 tbsp cinnamon

1 tsp vanilla

1 tsp baking soda

1/2 cup choc chunks

1/2 cup coconut sugar

1/2 cup olive oil

Add in any nuts, coconut, seeds, you like!




Method 

  1. Preheat oven to 180 degrees

  2. Combine in a bowl together ( with your hands as a blender will blend all the good chunks!)

  3. Lay onto a baking tray

  4. Bake for 12 minutes

  5. Enjoy warm yummm
