This week I moved house and it has been a stressful time – also means the kitchen hasn’t been available for me to use ( if you know me cooking is my stress release haha has been a little tricky!) So I jumped at the first opportunity I could do make some healthy raw treats to keep me going through the week. Boy oh boy do they taste like actual heaven. Maple in my opinion is the best sweetener to use in baking. It adds the best flavour and you really don’t need much . Hope you enjoy these as much as I do…


 

choc tahini bars

Ingredients

Base Ingredients  ( makes 10 bars)

3/4 cup almond meal

1 tbsp vanilla protein (optional)

2 tbsp maple syrup

1 tbsp almond butter

1 tbs coconut oil

1 tsp cinnamon

1 tsp vanilla

1 tsp rock salt

Superfood Add ins

1/2 cup buckinis

1/2 cup chopped nuts ( I used almonds and macadamias)

1/4 cup pepitas

1/4 cup cacao nibs

1/4 cup goji or incan berries

Topping:

1 tbsp tahini & 1 tbsp melted dark choc to top




Method 

  1. Place all base ingredients in a blender and half the amounts of each of the superfood ingredients eg 1/4 cup of the chopped nuts

  2. Blend until combined , it should be quite wet

  3. Stir in the remaining superfood ingredients. These will make the nice crunchy texture and the best part of the bar. Be careful not to blend it as they will become too fine, so I suggest mixing with your hands or a spoon

  4. Drizzle with melted dark chocolate and tahini and set in the freezer for 1 hour
