choc, rosemary & chilli cookies

Ok so I have made a few healthy cookies in my time on this blog but these are a serious winner. Who else struggles to create a healthy cookie base that isn’t super dry? Thanks to the dense olive oil and nutty almond meal , this combo is unbeatable and seriously dangerous ( had to make another batch overnight because they were all eaten) The bite of chilli along with the rosemary pairs really well with the dark chocolate and I also added maca powder for a great hormone & energy boost! Let me know if you make these and love them as much as I do ( a LOT!)

 

choc, rosemary & chilli cookies

Ingredients

1.5 cups almond meal

1/2 cup coconut flour

1 tsp vanilla

1 tsp baking powder

pinch salt

1 tsp maca powder (optional)

4 tbsp olive oil

1 tbsp honey ( or vegan sweetener)

1/2 block dark choc chopped

1 handful fresh rosemary

1/2 red chilli chopped




Method 

  1. Preheat oven to 160 degrees celsius

  2. Combine all ingredients in a bowl

  3. Roll into desired size balls and bake for 12-15 minutes ( monitor so they don’t go too brown, you want them nice and soft!)
