I was treated to some delicious almond and coffee nut butter recently which inspired me to make this delicious slice. It is packed with plant based protein and healthy fats making it a great satiating snack or dessert which won’t spike your sugar levels, leaving you feeling tired , lethargic or hungry.

Ingredients

50g protein powder ( I used a coffee flavour but could use vanilla ) 

1-2 tbsp almond coffee butter ( or use regular almond butter*)

1-2 tbsp maple syrup

1 tsp maca powder (optional)

Pinch Salt

1 tsp vanilla

1/2 cup cacao nibs 

+ almond milk if needed to stir 

*if you aren’t using coffee infused products, mix some instant coffee in a bit of hot water and add to mix

Topping

1/2 cup melted Coconut oil 

1/2 cup cacao powder 



Method 

  1. Mix all dough ingredients together except for the milk and cacao nibs. If it is too try then stir through a bit of milk to make it more doughy

  2. Mix through cacao nibs

  3. Line a tin and press mixture in evenly and place in freezer

  4. Meanwhile, melt your coconut oil

  5. Stir through the cacao powder

  6. Once mixed, pour over slice mixture and place back in freezer to set ( feel free to top with more cacao nibs or coconut for a finishing touch!)

  7. Wait 3+ hours to slice and store in freezer
