choc chilli cookies

You probably would’ve noticed a little bit of a spicy theme in my recipes. I love love love all things chilli and spice ! I have never tried chilli chocolate but knew it was a popular combo so thought I would try these out which I think are possibly one of my favourite healthy treats I have ever tasted. They are really simple and have a beautiful flavour and aren’t too dense either.. just perfect. I just made another batch as part of my meal prep for the week to have a little healthy afternoon pick me up or dessert on hand .. enjoy

 

choc chilli cookies

Ingredients

1 egg

2 tbsp maple syrup OR natural sweetener of choice

1 tbsp coconut oil

2 tbsp almond butter

1 tsp vanilla

1-2 tbsp chilli flakes( 1 is for topping)

1 tbsp cayenne pepper (optional)

sprinkle of salt

1 tsp baking soda

2 tbsp coconut flour

1/2 cup almond meal

1/2 cup chopped dark choc of choice ( I use lindt 90%)

Method

  1. Preheat oven to 160 degrees celsius and line two baking trays with baking paper

  2. Mix all wet ingredients in a blender or mixing bowl ( I find a blender whips it together better but if you only have a bowl and spoon you can use that)

  3. Mix together dry ingredients into the wet mixture

  4. Stir through the dark choc bits

  5. Roll cookie dough mix into desired sized balls and press down lightly with a fork

  6. Sprinkle chilli flakes on top of each cookie

  7. Bake for 15 minutes
