chai spice banana muffins with walnut crumble

I find it pretty hard to get to sleep most nights and could probably link it to the fact I am eating 90% dark chocolate every night before bed ( hello caffeine hit). So instead I created these after dinner treats which are the perfect blend to calm you for bed. If you don’t have the Beauty Sleep powder I used, you can still use an all spice mix as nutmeg, cardamom and clove are rich in magnesium and will help to calm your body down at night. The crumble on top is my favourite part.. you have to make these they’re just the bomb!


 

chai spice banana muffins with walnut crumble

Ingredients

Muffin

1 large banana

1/2 cup almond meal

1/4 cup buckwheat flour

1 tsp baking soda

1 tsp vanilla

1 tsp salt

1 tbsp almond butter or coconut butter

2 scoops vida glow powder ( OR 2 tbsp all spice mix + 2 tbsp extra flour)

Crumble 

1/3 cup oats

1/3 cup shredded coconut

1 tbsp coconut oil

1 tbsp maple syrup

1/4 crushed walnuts

banana slices

Method 

  1. Preheat oven to 180 degrees

  2. 2. In a bowl , mash banana. Add in remaining ingredients besides topping and stir until well combined

  3. 3. Line two large tins or small muffin tins , and place in mixture

  4. 4. In a another bowl combine topping ingredients, making sure the maple and coconut oil are runny. If not microwave before adding. Stir together to form a wet crumble and cover each muffin with crumble

  5. 5. Add a slice of banana and extra walnuts or desired topping to each muffin

  6. 6. Bake for 15 minutes or until golden
