chai spice banana muffins with walnut crumble
Ingredients
Muffin
1 large banana
1/2 cup almond meal
1/4 cup buckwheat flour
1 tsp baking soda
1 tsp vanilla
1 tsp salt
1 tbsp almond butter or coconut butter
2 scoops vida glow powder ( OR 2 tbsp all spice mix + 2 tbsp extra flour)
Crumble
1/3 cup oats
1/3 cup shredded coconut
1 tbsp coconut oil
1 tbsp maple syrup
1/4 crushed walnuts
banana slices
Method
Preheat oven to 180 degrees
2. In a bowl , mash banana. Add in remaining ingredients besides topping and stir until well combined
3. Line two large tins or small muffin tins , and place in mixture
4. In a another bowl combine topping ingredients, making sure the maple and coconut oil are runny. If not microwave before adding. Stir together to form a wet crumble and cover each muffin with crumble
5. Add a slice of banana and extra walnuts or desired topping to each muffin
6. Bake for 15 minutes or until golden
