cauliflower pizza
Ingredients
Pizza Base
1 cup cauliflower florets
1 egg
2 tbsp almond meal
2 tbsp buckwheat flour
salt, pepper, chilli to taste
Toppings:
1 cup kale leaves
1 cup crumbled falafels
1/2 cup feta or ricotta (optional)
1/4 cup shredded brussel sprouts
1/2 cup chopped baby tomatoes
2 tbsp olive oil
2 cloves garlic chopped
Method
Preheat oven to 200 degrees celsius
Blend all pizza base ingredients and lay on a tray ( if it seems very wet sprinkle 1 more tbsp of flour on top)
Bake for 25 mins or until golden
Place kale, oil, garlic and any other spices of choice in a bowl and mix until the leaves are coated
Place the kale, feta, brussels and tomatoes and falafel on the pizza base and bake for another 15 minutes or until the veggies are roasted and crispy!
