For any of you who have been following this blog since the start you will know one of my very first recipes was cauliflower pizza! The base wasn’t my best but it was enough to make a pizza out of. However, with the help of donna hay I have adapted and created a new recipe which is honestly the best cauliflower pizza I have ever made! From flavour to texture especially, it holds together SO well (which is hard to do with cauli pizza!) Let me know if you give this a try it is so delicious and can be done with so many flavours- I have put some ideas below xx

Ingredients 

  • Pizza Base

    1 cup cauliflower florets

    1 egg

    2 tbsp almond meal

    2 tbsp buckwheat flour

    salt, pepper, chilli to taste

    Toppings:

    • 1 cup kale leaves

    • 1 cup crumbled falafels

    • 1/2 cup feta or ricotta (optional)

    • 1/4 cup shredded brussel sprouts

    • 1/2 cup chopped baby tomatoes

    • 2 tbsp olive oil

    • 2 cloves garlic chopped

Method

Preheat oven to 200 degrees celsius

  1. Blend all pizza base ingredients and lay on a tray ( if it seems very wet sprinkle 1 more tbsp of flour on top)

  2. Bake for 25 mins or until golden

  3. Place kale, oil, garlic and any other spices of choice in a bowl and mix until the leaves are coated

  4. Place the kale, feta, brussels and tomatoes and falafel on the pizza base and bake for another 15 minutes or until the veggies are roasted and crispy!

  • maple eggplant, spinach, broccoli , chickpeas

  • shredded chicken, olives, red capsicum

  • pesto, zucchini, salmon pieces

  • crumbled tofu, mushrooms, rocket
