cashew & coconut butter brownies

So this happened.. and boy were they good! Made of super clean ingredients, these brownies full of healthy fats are the best satiating healthy indulgence you will ever eat!! Free from gluten and dairy with only a small amount of sugar, these are guilt free and will have you struggling to stop at one( I say from experience)

 

cashew & coconut butter brownies

Ingredients

1 cup cashew and coconut butter ( I buy from naked foods)

1/4 cup coconut oil

1/4 cup maple syrup

1 1/4 cups almond flour ( add more if too wet)

1 egg (1 chia egg for vegan)

1 tbsp baking powder

1 tsp vanilla

pinch salt

1 tsp maca powder (optional but adds caramel flavour)

1 tsp cinnamon

1/2 cup dark choc pieces ( I use lindt 90%)

Method

  1. Preheat oven to 180 degrees celsius

  2. Blend / mix all ingredients except the chocolate

  3. Add the chocolate pieces and mix through with hands ( a blender might blend the chocolate too fine)

  4. Place into lined baking tray and bake for 20-25 minutes ( usually I stick a knife in and if it is clean its cooked through! Timing will depend on the depth of your tin so just keep an eye on them)

  5. Enjoy best while warm while choccie is still melted !!
