caramel protein fudge
Ingredients
1 scoop vanilla protein powder ( I like using a plant based pea/rice or pumpkin seed)
2 tbsp almond or cashew butter or tahini ( I did one of each!)
2 tbsp maple syrup
1/2 cup roasted almonds or almond meal
1/2 cup shredded coconut
1 tbsp hemp seeds
1 tbsp cacao nibs
1 tsp vanilla
1 tsp rock salt
1 tsp cinnamon
optional: maca powder and mushroom eg reishi or cordyceps
1/2 block dark choc for top
Method
Blend all ingredients besides the chocolate into a blender until a dough forms ( if it is too dry add a dash of almond milk, if too wet, add some more almond meal)
Press into a lined baking tin
Melt dark chocolate and drizzle over slice and sprinkle with extra salt and extra hemp seeds!
Place in freezer to set and store. Slice when it is firm and enjoy!
