caramel mud cake

This is one of my favourite recipes I have EVER made! Probably because it is so simple with minimal ingredients, but also a high protein and low sugar swap. Feel free to add in anything you like ( I did almonds and dark choc ) , I think other nuts or coconut would work well too!

 

caramel mud cake

Ingredients

2 eggs

2 scoops vanilla protein powder

2 tbsp maple or rice malt

1 tbsp almond butter

1 pinch baking powder

1 pinch salt

(optional add ins: medicinal mushrooms, maca, collagen, slivered almonds, dark choc chunks)

Icing

1 tbsp coconut oil melted

pinch salt

1 tbsp tahini or cashew butter

1 tbsp coconut cream

(dash of sweetener if you like sweet ! )

Method

  1. Preheat oven to 180 degrees

  2. Stir all ingredients together until a thick dough forms. Add some coconut or almond milk if it is too thick

  3. Spread into lined baking tin and baking for 20 mins or until cooked through

  4. Allow to cool

  5. Mix all icing ingredients together and stir well

  6. Pour over cake and refrigerate until icing firms
