caramel donuts

This recipe I adapted from the loving earth website and made my own by reducing the sugar content, and making it dairy and gluten free. The donuts turned to delicious- quite moist and soft and taste amazing drizzled with some healthy chocolate!

 

caramel donuts

Ingredients

1 cup oat flour
1/3 cup coconut sugar or natvia
1.5 tsp baking powder
1/4 tsp cardamon
pinch of cinnamon
1/2 cup soy milk
1tsp apple cider vinegar
1tsp vanilla extract
1 tbsp ground flaxseed mixed wirh 3 tbs water
1/4 cup coconut oil

3/4 block salted caramel loving earth choc



Method

  1. Preheat the oven to 180 and grease a donut tray.

  2. Mix together the dry ingredients.

  3. Mix together the soy mylk, apple cider vinegar and let sit for a few minutes until it thickens.

  4. In a small saucepan, melt the soy mylk, vanilla, flaxseed and coconut oil over a low heat until it has just melted (do not let it boil/simmer).

  5. Combine both the wet and dry ingredients until a soft dough forms.

  6. Spoon the mixture evenly into the donut holes

  7. Bake for 15-20 minutes. You’ll know they’re done once they have firmed up and a toothpick comes out clean and the outside is firmly crisp

  8. Melt the loving earth chocolate and drizzle or coat to your desired amount!
