capsicum brownies

You may think I am a little crazy but I love sneaking different veggies into every day snacks and treats! These brownies turned out so much more tasty than I thought they would be and are an extremely clean snack ( I wouldn’t even call them a treat). They are high in protein and low sugar, making a perfect snack for any time of day ( literally just ate one for brekkie). Let me know if you make these and how you like them

 

capsicum brownies

Ingredients

1 roasted capsicum

1/2 cup cacao powder

2 eggs

1/4 cup coconut oil

1 cup almond meal

1/4 cup buckwheat flour ( or could use coconut/ chickpea etc)

2 tbsp cacao nibs

1 tsp baking soda

nuvia sachet/ stevia ( or 2 tsp sweetener of choice)

1 serving of lean protein  ( I used morlife choc flavour, optional addition)

Toppings(optional): include 90-100% melted dark choc, coconut flakes, goji berries, buckinis

Method

  1. Preheat oven to 180 degrees celsius

  2. If you haven’t already, cut and place capsicum on tray and bake for 15-20 mins or until soft

  3. Combine all your ingredients in a blender until you get a smooth and thick batter

  4. Line a tin with baking paper and place mixture into tin

  5. Bake for 20-25 mins or until you can stick a knife or toothpick in and it comes out clean ( make sure its cooked through but also want it soft so don’t overcook!)

  6. Allow to cool then drizzle with dark choc and superfood toppings of choice

  7. Enjoy and due to lack of preservatives they won’t stay out the fridge for long, after 2-3 days put the remainders in the fridge or freezer and eat cool or heated up with some coconut yogurt (YUM!)
