Cacao & Turmeric Granola

I go crazy for chunky granola clusters. It has taken me a while to work out the key ingredients that make it stick together ( nope it is not buckets of sweetener!). This cacao and turmeric combination is a nice balance with the spice and bitter cacao. I usually go for caramel or vanilla flavours so this was a nice change. Add in your favourite nuts / seeds/ additives to make it your own ! I love snacking on this alone , on a smoothie or with some coconut yoghurt. 

 

Cacao & Turmeric Granola

Ingredients

  • 1/2 cup oats

  • 1/2 cup buckwheat kernels

  • pinch rock salt

  • 1 tsp vanilla

  • 1 scoop of chocolate protein powder ( or vanilla just add more cacao)

  • 1 tbsp cacao powder

  • 1/2 tbsp turmeric

  • 2 tbsp pepitas

  • 1 tbsp chia seeds

  • 1 tbsp hemp seeds

  • 1 tbsp flaxseeds

  • 1/3 cup melted coconut oil

  • 1 tbsp almond butter

  • 1 tbsp maple syrup

  • 1/2-3/4 cup mixed nuts chopped ( I used a mix of walnuts, almonds, cashews, pecans)

Method 

  1. Preheat the oven to 170 degrees celsius

  2. Mix all dry ingredients together in a bowl

  3. Microwave wet ingredients and stir together

  4. Mix the wet mix through the dry until thoroughly combined. You can use your hands to make sure

  5. If it feels too wet, add some more buckwheat / oats and if it is too dry add a bit more maple or coconut oil. It should be quite stuck together

  6. Line a baking tray ( or 2 if small) with baking paper

  7. Spread the mix out evenly ( if it is too thick it is harder to cluster so try and make it well spread out)

  8. Bake for 20-30 minutes or until golden ( check at 20 and taste or look to see)

  9. Remove and allow to cool before breaking ( this is key to the clusters forming ! Don’t touch it till it’s cool)
